B is for Banana

Bananas are high in potassium and also contain Fibre, Tryptophan, Vitamin B6 & Vitamin C.

Potassium also helps muscles to contract and nerve cells to respond and can reduce the effect of sodium on blood pressure.

They can help to reduce stress, anxiety & depression, help with blood sugar swings and reduce sleeplessness.


They can be used to make healthy cereal bars/cookies. Use instead of butter and flour to bind together oats and other ingredients. I like to add dates for sweetness and broken nuts and blueberries or cherries. I also like to add ground flax seeds.


I cook mine in a small cookie tray for 20-30 mins at 180-200 deg C. They can be kept up to 3 days (in a fridge at this time of year).
